Elpís, meaning “hope” in ancient Greek, represents our commitment to recovering and enhancing Ottavianello, an almost forgotten native grape variety. A red wine that expresses our bond with the territory.

GRAPE VARIETY: 100% Ottavianello
PRODUCTION AREA: Itria Valley, Puglia
VINEYARD ALTITUDE: 253 m above sea level
AGE OF THE VINES: 18 years
SOIL: predominantly clayey, with a notable presence of limestone
VINE TRAINING SYSTEM: espalier systems with Guyot pruning system
GRAPE YIELD PER HECTARE: 60-70 quintals
HARVEST: manual harvesting of the grapes
VINIFICATION: destemming and pressing of the grapes, maceration with the skins for 10 days with the application of the salasso technique, to obtain a wine with more aromas and structure. Fermentation in steel at controlled temperature.
REFINING: 5 months in stainless steel tanks and 2 months in the bottle
ALCOHOL CONTENT: 12.5% vol
SIZE: 75 cl
RECOMMENDED SERVING TEMPERATURE: 8-10 °C
TASTING NOTES
COLOR: ruby red
AROMA: intense and fruity, with floral notes
TASTE: enveloping in the mouth, not very structured, savoury and well balanced
