OUR OLIVE OIL

Olive cultivation, like viticulture, is a tradition our family has passed down through generations. Our land is home to centuries-old olive trees, as well as some millennial specimens, witnesses to a deeply rooted agricultural history.

The name ITRIO refers to our land, the Valle d’Itria, while also celebrating the harmony of the three varieties that make up the blend: Ogliarola, with its delicate and smooth profile; Toscanina, which brings elegance and intensity; and Cellina di Nardò, which adds depth and character.

The olives come from three family-owned limestone plots, where the trees grow in an ideal habitat between 150 and 260 meters above sea level.

Harvesting is carried out strictly by hand, respecting natural rhythms and preserving the integrity of the fruit.

Cold extraction, performed within a few hours of harvest, preserves the organoleptic properties, structure, and natural polyphenol content, resulting in a balanced extra virgin olive oil.

Produced in limited quantities, Itrio is the result of a careful selection of the finest olives and expresses the identity and characteristics of each vintage.
